A pot roast is not any specific cut of meat but instead describes a roast cooking preparation. Leave the lid open for 5-7 minutes until you start seeing white billowing smoke coming out of the grill. For the best results, store your unused pellets in a sealed room temperature container like this 20 lb pellet container rather than in the Traeger hopper outside. The chuck roast dries out quickly once it is cut. Submerge the roast in a pot full of water and give it a quick rub down. Smoke for 3 hours, or until the internal temperature of the roast is 165 degrees F. Then I wrap in aluminum foil with a little bit of beef broth until it's probe tender (usually around ~200F for me but sometimes 210F).
